Mee Siam, which means “Siamese noodles, in malay” a dish influenced by Thai flavours but widely enjoyed in Malaysia and Singapore. It features rice vermicelli stir-fried in a fragrant, tangy sauce made with tamarind, chilli, and shrimp paste. Some variations include a soupy version with a light, zesty gravy. This recipe focuses on the dry version, which is just as flavourful but easier to prepare.
